Matcha, Green Tea (Camellia sinensis)
Our organic Matcha is a superfood powder ground from Green tea, with fantastic flavour and high in antioxidants, from a tea estate on the volcanic island of Jeju, off the Southern tip of Korea.
Attention to detail is what makes this supplier stand out. They meticulously plan the tea growing to ensure that they get the best quality from the leaf, and use a mix of skilled labour and machine harvesting to tend to the crops.
The flavour is exceptional, in part due to the research and development undertaken at the estate to refine the leaf and processing.
Matcha is special for a number of reasons; firstly, the plants are shaded before the leaves are harvested which causes them to produce more caffeine and theanine in the leaves. Secondly, before being ground, the stems and veins are removed, and thirdly, the powdered leaves are dissolved in water rather than infused as with all other teas. All these factors contribute to the flavour profile of the end product.
